* Green Chillies: 6-8 (slit or pasted)

* Oil: 1 cup
* Salt: To taste
* Red Chilli Powder: 1.5 tbsp
* Turmeric Powder: 1 tsp
* Coriander Powder: 2 tbsp
* Garam Masala Powder: 1 tsp
* Whole Spices: Bay leaf (2), Cinnamon stick (2), Cardamom (black-2, green-4), Cloves (6-8), Black peppercorns (10-12), Cumin seeds (1 tsp)
* Fresh Coriander & Mint Leaves: A handful each (chopped)
* Food Colour: A pinch (orange, mixed with 2 tbsp milk/water)
* Kewra Water: 1 tsp (optional, for fragrance)

**Let’s Get Cooking, Boss! 👨‍🍳**

1. **Mutton Gravy (Korma) Time:**
* Ek baray patelay (pot) mein oil garam karein. Pyaaz ko light golden brown hone tak fry karein. Half pyaaz nikal kar side par rakh dein (yeh baad mein garnish ke liye kaam ayegi).
* Baqi pyaaz mein ginger garlic paste daal kar 1 min bhun lein. Phir mutton daal kar rang badalne tak fry karein.

2. **Rice Preparation:**
* Ek alag baray patelay mein itna pani lein ke chawal us mein achi tarah doob jayein. Namak, thoray se sabut garam masalay (bay leaf, 2-3 green cardamom) aur 1 tbsp oil daal kar ubaal lein.
* Jab pani ubalne lage toh bheegay hue chawal daal dein. Chawal ko sirf 70-80% tak pakana hai, yani ek kanni rehni chahiye. Chawal nikal kar paani drain kar dein.

3. **Biryani Layering & Dum! (The Magic Happens Here!) ✨**
* Jis patelay mein aap ne biryani ko dum dena hai, us ki bottom par thora sa oil laga lein.
* Pehle chawal ki ek layer bichayein.
* Phir us ke upar tayyar mutton korma ki layer phaila dein. Is ke upar bacha hua hara dhania, podina, fried pyaaz aur thoray se green chillies sprinkle karein.
* Dobara chawal ki layer lagayein aur yeh process repeat karein. Last layer chawal ki honi chahiye.

4. **Dum Dena (The Grand Finale!):**
* Patelay ko achi tarah cover karein (foil paper laga kar phir lid rakhein, ya geelay aatay se sides seal karein taa ke bhaap bahar na nikle).
* Pehle 5-7 minute tez aanch par rakhein, phir bilkul halki aanch (taway ke upar) 20-25 minute ke liye dum par rakh dein.
* Jab dum khul jaye toh chamch se halkay haathon se mix karein, taa ke chawal tootay nahi.
