* Tamatar (Tomatoes): 4-5 medium, chopped or pureed (the more, the merrier!)
* Adrak Lahsun Paste (Ginger Garlic Paste): 2 tbsp (freshly made, tab hi maza hai!)
* Hari Mirch (Green Chillies): 4-5, slit lengthwise (adjust according to your spice level 🔥)
* Dahi (Yogurt): Half cup, whisked (optional, for creaminess)
* Oil: Half cup
* Namak (Salt): To taste
* Laal Mirch Powder (Red Chilli Powder): 1.5 tsp (ya jitna teekha pasand ho!)
* Haldi Powder (Turmeric Powder): Half tsp
* Dhaniya Powder (Coriander Powder): 1.5 tsp
* Zeera Powder (Cumin Powder): 1 tsp
* Garam Masala Powder: 1 tsp (last mein dalna hai!)
* Hara Dhaniya (Fresh Coriander): For garnish
* Adrak (Ginger): Juliennes for garnish
**Banane Ka Tareeqa (Method):**
1. **Step 1 – Chicken ki Bhunai:** Sab se pehle, ek karahi ya degchi mein oil garam karein. Jab oil garam ho jaye, is mein chicken daal dein aur halka sa fry karein jab tak uska colour change ho kar golden brown na ho jaye. Isi point par chicken ko namak laga kar bhi fry kar sakte hain. 👍
2. **Step 2 – Adrak Lahsun ka Kamaal:** Chicken ka colour badalte hi, is mein adrak lehsun ka paste shamil karein aur itni bhunai karein ke uski khushboo anay lage aur chicken ke saath achi tarah mix ho jaye. Ah, kya khushboo aati hai! 👃✨
3. **Step 3 – Tamatar ka Magic:** Ab bari hai tamatar ki! Chopped tamatar ya tomato puree daal dein aur achi tarah mix karein. Karahi ko dhak dein aur low flame par pakne dein jab tak tamatar naram na ho jaye aur apna pani chor dein. Ye step Karahi ka ‘soul’ hai! ❤️
4. **Step 4 – Masalon ki Bhunai:** Jab tamatar naram ho jayen, unko chamach se achi tarah mash kar lein. Phir is mein laal mirch, haldi, dhaniya aur zeera powder daal dein. Ab aati hai sab se zaroori baat – **B_H_U_N_A_I!** 🔥 Masalon ko itni achi tarah bhoonein ke oil alag ho jaye aur masale chicken ke saath ek jaan ho jayen. Agar dahi add kar rahe hain, toh is step par dahi shamil karein aur tez aanch par bhunai karein. Yahi bhunai aapki Karahi ko asli Pakistani taste degi! 🇵🇰

5. **Step 5 – Dum aur Garnish:** Jab oil upar aa jaye aur chicken tender ho jaye (agar zaroorat ho toh thoda sa pani daal kar mazeed galayen), toh is mein hari mirchein shamil karein. Last mein garam masala powder sprinkle karein, hara dhaniya aur adrak ke juliennes se garnish karein. Dhak kar 5-7 minute ke liye ‘dum’ par rakh dein, taaki masalon ki khushboo achi tarah ramm jaye. 💯
