* Chicken: 1 kg (small to medium pieces)
* Tamatar: 3-4 medium (peeled & chopped)
* Adrak Lehsun Paste: 2 tbsp
* Hari Mirch: 4-5 (chopped, plus some for garnish)
* Oil: ½ cup (ya jitna aapko pasand ho)
* Namak: Hasb-e-Zaiqa (apne taste ke mutabiq)
* Lal Mirch Powder: 1 tsp (ya zyada, agar teekha pasand ho)
* Kali Mirch Powder: 1 tsp
* Zeera Powder: ½ tsp
* Garam Masala Powder: ½ tsp (end mein thoda sa)
* Hara Dhaniya: For garnish
* Adrak (julienned): For garnish
**Ab Aate Hain Asal Kaam Pe – Banate Kese Hain! 🧑🍳**
1. **Pehla Step: Chicken Fry!** 🔥
Ek karahi mein oil garam karein. Jab oil garam ho jaye toh chicken ke pieces daal dein aur unko light golden hone tak fry karein. Isse chicken andar se juicy rehta hai aur bahar se halka crispy. 
2. **Dosra Step: Adrak-Lehsun Ki Khushboo!** 👃
Chicken ko oil se nikaal kar side pe rakh dein (thoda sa oil karahi mein rehne dein). Ab usi oil mein adrak-lehsun paste daal kar halka sa bhun lein, jab tak uski achi si khushboo na aanay lage. Khayal rahay, jalana nahi hai!
3. **Teesra Step: Tamatar Aur Masalay Ki Magic!** 🍅✨
Jab adrak-lehsun bhun jaye toh chopped tamatar daal dein. Thori der dhak kar pakayen jab tak tamatar naram na ho jaen. Jab tamatar naram ho jaen toh chamach ya spatula ki madad se unko achay se masal lein taaki gravy smooth bane. Ab is stage pe namak, lal mirch, kali mirch aur zeera powder shamil karein. Masalon ko achay se tamatar ke saath bhun lein, jab tak oil alag na ho jaye. 
4. **Chautha Step: Chicken Ki Vaapsi Aur Dum!** 🏡
Bhunne hue masalon mein wapas fried chicken daal dein. Achay se mix karein taake masalay chicken pe achay se coat ho jaen. Ab hari mirchein bhi daal dein. Thora sa paani ka cheenta laga kar bilkul halki aanch (dum wali) pe 10-15 minute ke liye dhak kar pakayen, taake chicken gal jaye aur saare flavors mix ho jaen. Last mein garam masala powder sprinkle karein.
5. **Akhri Touch: Garnish Aur Serve!** 🌿
Jab Karahi ready ho jaye, toh aanch band kar dein. Upar se hara dhaniya aur julienned adrak daal kar garnish karein. Aur agar aapko *next level* taste chahiye na, toh serve karte waqt thoda sa *desi ghee* upar se daalna mat bhoolna! 💯
