**Ultimate Desi Chicken Karahi (Homemade Edition!)**
**Ingredients:**
* Chicken: 1 kg (cut into karahi pieces)
* Tomatoes: 4-5 medium, finely chopped or puréed
* Ginger-Garlic Paste: 2 tablespoons (freshly made, the secret is here!)
* Green Chilies: 4-5, slit or finely chopped (adjust to your spice level, obviously!)
* Yogurt: 1/2 cup, whisked
* Oil: 1/2 cup (or ghee for that extra punch!)
* Salt: 1 tsp (or to taste)
* Red Chili Powder: 1 tsp
* Turmeric Powder: 1/2 tsp
* Coriander Powder: 1 tsp
* Cumin Powder: 1/2 tsp
* Black Pepper Powder: 1/2 tsp (freshly ground, please!)
* Garam Masala: 1/2 tsp
* Fresh Ginger: 2-inch piece, julienned (for garnish)
* Fresh Coriander: 2-3 tbsp, chopped (for garnish)
**Method:**
1. **Heat it up!** Ek large kadhai ya wok mein oil garam karein. Jab garam ho jaye, chicken pieces daal dein aur high heat par light golden hone tak fry karein. Is se chicken tender rehta hai aur flavour lock ho jata hai. 😍 Remove from kadhai and set aside.
2. **Masala Magic!** Usi oil mein ginger-garlic paste daal kar 30 seconds tak fry karein jab tak khushboo na aanay lage. Ab chopped/puréed tomatoes add karein. Ache se mix karein aur dhak kar 5-7 minutes tak pakayen jab tak tomatoes naram na ho jayen aur oil alag na ho jaye. (Yeh step hai game-changer!).
3. **Spice it up!** Saare dry masale (salt, red chili powder, turmeric, coriander, cumin, black pepper) daal dein. Ache se bhunain 2-3 minutes tak. Thora paani ka cheenta laga sakte hain taake masale jalein nahi.
4. **Chicken Returns!** Ab fried chicken wapas daal dein kadhai mein. Masale ke saath ache se mix karein aur 5 minutes tak bhunain.
5. **Yogurt Boost!** Whisked yogurt aur green chilies add karein. Ache se mix karein. Dhak kar low flame par 15-20 minutes ke liye pakne dein, ya jab tak chicken puri tarah gal na jaye aur oil surface par na aa jaye. (Patience is key here, bhai log!)

6. **Final Touch!** Jab chicken gal jaye aur gravy thick ho jaye, toh garam masala powder daal dein. Fresh julienned ginger aur chopped coriander se garnish karein. Bus, ho gaya! 🎉
